  • Water (warm): 1/4 cup

  • Active dry yeast: 2 1/4 tsp (1 packet)

  • Granulated sugar: 3 tbsp

  • All-purpose flour: 3 1/2 cups

  • Eggs: 4 large

  • Unsalted butter (softened): 1/3 cup

  • Mayonnaise: 1/2 cup

  • Sour cream: 1/4 cup

  • Cream cheese (softened): 4 ounces

  • Pickled jalapeños (finely chopped): 2 tbsp

  • Pickled jalapeño juice: 1 tbsp

  • Fresh lime juice: 1 tsp

  • Smoked paprika: 1/2 tsp

  • Garlic powder: 1 1/2 tsp

  • Onion powder: 1 1/2 tsp

  • Black pepper: 1 1/2 tsp

  • Large onion (thinly sliced): 1

  • Buttermilk: 1 cup

  • Ground chuck roast: 16 ounces (1 pound)

  • Sharp white cheddar cheese.

  • Gruyère cheese.

  • Monterey Jack cheese.

  • Smoked bacon (cooked).

  • Cooking spray or vegetable oil.
