Crispy Onions.
When frying the onions in a Dutch oven, ensure the oil is heated to the correct temperature of 350°F (175°C). Frying at the right temperature is crucial for achieving evenly crispy, golden-brown onions. Fry in small batches to avoid overcrowding, which can cause the temperature to drop and result in soggy onions. Once fried, drain the onions on a paper towel-lined plate to remove excess oil. This method ensures your onions are perfectly crispy and add the ideal crunch to your burger.
Cheese Melting.
To ensure the cheese melts perfectly on your patties, place the cheese slices on the patties during the last minute of cooking. Cover the pan or grill with a lid to trap the heat, which helps the cheese melt evenly over the patties. This creates a gooey, savory layer that enhances the overall burger experience. Using a mix of sharp cheddar, Gruyère, and Monterey Jack adds a rich and complex flavor to your burger, making every bite a delight.
Layering Order.
Start with a base layer of Zesty Jalapeño Crème on the bottom bun, followed by the patty with melted cheese. Add crispy smoked bacon for a smoky flavor, then layer with fried onions and fresh or pickled jalapeños for a balance of textures and flavors. Finish with any additional toppings you prefer, like lettuce or tomato. Thin Crispy Onions Ingredients:
1 large onion, thinly sliced (use a mandoline slicer for consistent, thin slices)
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1 Inch of Vegetable oil (enough to submerge onions in a Dutch oven)
Patty Ingredients:
16 ounces (1 pound) ground chuck roast
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Assembly Ingredients:
Brioche buns (from Step 1)
Zesty Jalapeño Crème (from Step 2)
Thin crispy onions (from this Step)
Sharp cheddar cheese slices
Gruyère cheese slices
Monterey Jack cheese slices
Smoked bacon, cooked
Fresh or pickled jalapeños

How to Make It.
Crispy Fried Onion.
Soak the Onions: Place the thinly sliced onions in a bowl and cover them with buttermilk. Let them soak for at least 30 minutes.
Prepare the Coating: In a shallow dish, combine the flour, salt, paprika, garlic powder, onion powder, and black pepper. Mix well.
Coat the Onions: Remove the onions from the buttermilk, letting any excess drip off. Dredge them in the seasoned flour mixture until well-coated.
Heat the Oil: In a Dutch oven, heat the vegetable oil to 350°F (175°C).
Fry the Onions: Carefully place a small batch of coated onions into the hot oil. Fry until golden brown and crispy, about 2-3 minutes. Avoid overcrowding the pot.
Drain: Use a slotted spoon to remove the fried onions and transfer them to a paper towel-lined plate to drain any excess oil. Repeat with remaining onions.
Prepare and Cook the Patties.
Prepare the Patties: Mix the ground chuck roast with kosher salt, ground black pepper, garlic powder, and onion powder. Divide the seasoned ground beef into 4 equal portions, about 4 ounces each. Shape each portion into a patty.
Cook the Patties: Cook the patties using your preferred method (griddle, skillet, or grill) until they reach your desired doneness. Melt sharp cheddar, Gruyère, and Monterey Jack cheese slices on top of the patties during the last minute of cooking.
Assemble the Burger.
Buns: Slice the brioche buns in half and lightly toast them if desired.
Sauce: Spread the Zesty Jalapeño Crème on the bottom bun.
Patty: Place the cooked patty with melted cheese on top of the sauce.
Bacon: Add crispy smoked bacon on top of the patty.
Toppings: Layer with thin crispy onions, fresh or pickled jalapeños, and any additional toppings you like.
Top Bun: Spread a little more sauce on the top bun and place it on top of the burger.
